Faithful to the Barbadian tradition, Mount Gay produces molasses rums (sourced throughout the Caribbean) distilled in column and pot stills. After distillation, the rums are aged mainly in old Bourbon barrels, but the distillery can also use other types of barrels (ex-Cognac, ex-Port, etc.).

After aging, the column and pot still rums are assembled in different proportions to create the multiple expressions of the range.
