Mexico is one of the world's largest sugarcane-producing countries. For a very long, rum production remained something done by a multitude of very small, craft distilleries which produced what is called locally "Aguardiente" aimled a the local market. A few large distilleries appeared at the beginning of the 20th century, including two Bacardi factories in the 1930s. On the side of the industrial brands, many artisanal distilleries have been created in recent years by producing authentic "old-fashioned" rums, to be followed...
